Our Inspiration for this dish.
We have always been very inspired with the quality of Spanish produce. This dish is totally Spanish inspired.
We offer Spicy olives which are decorated with Salsichon, a Spanish salami.
The Manchego Goat cheese used to form part of our Signature platter the; Cheese & Charcuterie platter. However we decided to give it more importance which it totally deserves. The young version we offer is not the typical kick in your face pungence you might expect from other goat cheeses.
We take inspiration from where ever unlikely source is may come from. Tourists have visited our shop and upon their advice sometimes adding or tweaking our dishes accordingly.
Years ago two best friends of ours traveled to Spain to walk the Camino di Santiago. Beers and drunken conversations later of their travel happened upon a small typical dish they found at most rest stops along their beautiful journey. Voila our fried chorizo dish (the star of the show). We make this crowd pleaser by dicing chorizo, frying it in Bay Leaves & oil then simmering down in some red wine. Go ahead try it out next time you have guests at home, they will surely love it! 😉

How to identify a young manchego goat cheese from an old one?
It’s all in the rind. A red rind would mean young, when you venture towards the grey and brown rinds then these would be more mature.
We then add some toasted bread, infused with our olive oil , garlic & herb concoction. Finished with some twirled Serrano ham.
